One of her fondest memories from her time there was of Al-Baik chicken, a fried chicken restaurant chain with amazing chicken and garlic sauce. In Maryam’s nostalgia, we’ve worked hard to recreate the fried chicken since it’s not available outside of Saudi. And we think we got pretty darn close. Albaik Chicken Recipe: 1: In a bowl mix together 1 tsp dry ginger powder, 1 tbsp garlic powder, 1 tbsp salt, 1/2 tsp cinnamon powder, 2 tbsp paprika, 3 tbsp lemon juice and 3 tbsp oil. Mix well and make thick paste. 2: Prick the chicken pieces well using fork. Marinate chicken pieces with the prepared paste for 4 to 6 hours.
For the marinade

- Prepare the marinade by mixing together all the marinade ingredients.
- Stab the chicken pieces all over with a fork.
- Rub the marinade really well into the chicken pieces.
- Place the chicken pieces on a plate and spoon on any remaining marinade.
- Cover and chill for 6-8 hours.
- Mix together the flour, cornflour and baking powder (the dry mix).
- Take each chicken piece in turn and dip it first into the dry mix, then the beaten egg, then once more in the dry mix.
- Deep fry the chicken pieces at 180°C/360°F for about 15 minutes.
- Remove the chicken pieces from the oil and place on some kitchen paper to drain.
- Serve with fries, salad and garlic dip.
